On the quiet Kadıkalesi shore, we set a table to share the day’s freshest fish against the sunset.
Diamond is the rare kind of place that does not announce itself. The doors open to the breeze; the tables follow the sun. Our kitchen reads the day’s catch like a letter — and answers it in a single, precise plate.
Two and a half decades on the Kadıkalesi coastline have taught us that elegance is restraint. A pinch of Aegean salt. A single squeeze of lemon. The slow, ceremonial pouring of olive oil. Nothing more.
On the Kadıkalesi shore of Kuşadası, Diamond Restaurant pairs fresh seafood, Aegean cuisine and sunset views — beachfront dining where the day slows down.
Diamond began as a small family kitchen behind the pines of Kadıkalesi, feeding the fishermen who returned at dawn with that day’s catch. A quarter of a century later, the room is wider, the wine list longer, the linen whiter — but the rule has not moved an inch.
The Aegean does not need translation. It needs a quiet table, a long afternoon, and a good piece of fish. — The House
